Is there anything more decadent than a chunk of Heath toffee? Yes, there is! These cookies! I absolutely love toffee. The caramelized flavor of molasses always puts me in the mood for fall. Since fall is just around the corner, I figured it was time to whip up a batch of my toffee cookies.

Just as a warning, these cookies are unbelievably addicting. They have a soft, buttery crumb that melts in your mouth. And that sweet, fruity center! The combination is a perfectly tart cookie that I dare you to eat just one of.
